I have a blog subsite to my IT team site and I have created multiple categories for each user. How do I use these categories and what is there purpose. When I click on them nothing happens and when I post a blog it posts on to the main page. I want each user to have their own space to post.

The categories are used to categorize your post topics. Kind of like metadata.

As Henry said the categories are like metadata; in the blogging world they're also known as tags. Think of them as the different topics which a post may be related to. When you click on a category it will filter the posts made on the blog and only show those postings which have that category selected in the posting.

If you wish for each user to have their own space to post then you would have to create a seperate blog site for each user, you could make them subsities of a main page which represents your blogging space.
